How It Works
A "cup" is a volume measure, and different ingredients pack into that volume at very different densities. One US cup of water (236.6 ml) weighs 237 g, but one cup of sifted all-purpose flour weighs only about 125 g because it is much less dense (lots of air between particles).
The conversion formula is straightforward:
Grams = cups × grams_per_cup
Cups = grams ÷ grams_per_cup
The grams-per-cup values used in this tool are based on established culinary standards and the USDA food data. For example:
• All-purpose flour (unsifted, spooned): 125 g/cup
• Granulated sugar: 200 g/cup
• Butter: 227 g/cup (one cup = 2 US sticks)
• Honey: 340 g/cup (much denser than water due to dissolved sugars)
The US cup is 236.6 ml; the metric/Australian cup is 250 ml. If you select the metric cup, all densities are scaled proportionally (× 250/236.6).
Frequently Asked Questions
Why do different ingredients weigh different amounts per cup?
Weight depends on density. Flour is light and airy; honey is heavy and viscous. A cup measures volume (how much space something takes up), not weight. That is why weight measurements are far more accurate for baking — digital scales remove the inconsistency of how loosely or tightly you pack the measuring cup.
Is a US cup the same as an Australian or metric cup?
No. The US customary cup is 236.6 ml, while the Australian and metric cup is 250 ml — about 5.7% larger. Recipes from Australia, Canada, or the UK that specify "cup" may use the 250 ml definition. This tool lets you toggle between the two standards.
What is the difference between sifted and unsifted flour?
Sifted flour is aerated and can weigh as little as 100 g per cup, while unsifted flour spooned into a cup weighs about 125 g, and flour scooped directly from a bag (packed) can weigh up to 150 g. This tool uses the spooned-and-levelled standard (125 g/cup) unless otherwise noted.
Can I use this for liquids too?
Yes. Milk, cream, olive oil, honey, and water are all included with their actual densities, making conversions more accurate than assuming all liquids have the same density as water.
